Stuffed Pepper Soup

I wanted to share a quick little dinner find from the other week. We're big fans of soups, stews and other one pot wonders. This bowl of goodness is a twist on stuffed peppers from Jenn at Peas and Crayons. She takes bell peppers, rice, tomatoes, lentils, and an amazing bend of spices to create this magical concoction. The lentils are a dreamy addition giving the soup a creamy, stew like texture. I've linked to her recipe above and featured one of her gorgeous photos here:

I'm never sure on dishes like this if the kids will go for it given all the extra spice and flavor, but this got the thumbs up from everyone!! Not nearly as pretty as Peas and Crayons' picture, but a look at how it turned out for me is below. Also of note, the soup is vegan, dairy-free, gluten-free, freezer-friendly, and can easily be made-ahead. Let me know if you give it a try!
