Bob's Red Mill Soup Mixes

Big Bob's Red Mill fan here, and a few weeks back my Albertson's was having a huge Bob's sale so I stocked up on some of our favorites and added a few new items to the cart. Plant-based soup mixes to be exact. There are two we've tried so far and of course they are awesome and make dinner a breeze!


Let's talk about the Bountiful Black Bean Soup Mix first...


Bountiful indeed. This mix contains black beans, black-eyes peas, pearled barley and navy beans. According to the package all those beans and grains equals 23 grams of fiber and 21 grams of protein per serving! It is one satisfying soup. I cooked the mix up with an onion, bell pepper, jalapeño, diced tomatoes, and vegetable broth. For added spice I also used garlic powder, chili powder, and cayenne pepper, but the options are... bountiful :-)



Last but not least, the Veggie Soup Mix...


I have yet to snap pictures of this yummy mix, but we've actually made it a handful of times. We even made it for company and it got a thumbs up from all our guests. This mix is loaded! Green split peas, yellow split peas, barley, lentils, and vegetable pasta (made of semolina wheat flour, spinach powder, tomato powder, and paprika powder). I cook this all up in vegetable broth and add onion, celery, carrots, thyme, pepper, and salt. Before serving I add a cup of oat milk (regular milk would work fine too) to add a little creaminess.


We've yet to try the 13 Bean Soup Mix features in the picture, but it's on the list. If you try any of these I'd love to hear what you added to them and how it turned out!
